The perfect cup of Hojicha Roasted Green Tea

Hojicha is a roasted green tea from Japan. What I really love about this tea is the taste: A light refreshing but flavorful, with a fine roasted aroma and notes similar to black teas, dark almost red in color. I discovered this tea when I was doing the last project for my Master and our theme was to make a sweet menu paring with Japanese teas. The moment I try this tea I felt in love. It has a taste like no other tea.

Interesting facts of Hojicha Tea: I was very surprise when I found out that the word (Cha) means tea in Japanese and if you check the names of the different Japanese Teas you will notice that most of them end in CHA. I will give you some examples like Genmaicha, Sencha, Bancha, Hojicha and others. The growing conditions for this tea are: sunlight, mild climate. Grade: third or forth flush, larger lower leaves and some stems. Processing methods: Steamed 30 seconds then sun-dried before UJI that means steam-drying and hand-rubbing techniques that creates very fresh and fragrant taste distinct of Japanese tea, then follows the method of kneading and additional roasting.

Let´s go with the recipe: To make the perfect cup of Hojicha tea you will need. Ingredients: Pax: 1 5 gr of Hojicha tea 120 ml of Soft water at 90 ° C Process: Weigh your Hojicha tea, Add the water at 90 ° C. Infuse for 30 seconds. You can use the same Hojicha leaves to make up to 3 pots.

Tips and Tricks to make your perfect cup of Hojicha tea First use a teapot with a built-in strainer because this tea has big stems and leaves so it will be hard to put the quantity of tea that you need into an infuser. It is very important to weigh your tea, so the flavor should always be the same. Ensure the correct temperature of your water to enhance the sweetness of the tea. The water should be no hotter than 90 ° C. Pay attention to the steep time that is 30 seconds. If you leave it for longer the result would be a very bitter tea and you won’t enjoy it. Let the tea leaves steep naturally to obtain a perfect infusion. Don’t drink it straight away, leave it to cool down a little bit.

Latte Hojicha Ingredients: 100 ml of Soy milk or any milk that you like 1 date 120 ml Hojicha tea cup 1 Lemon Zest Process: Let infuse your soy milk with your date overnight. The next day blend your milk. add it to a pot and boil it. Have your Hojicha tea cup ready. You will need 120 ml. With a blender froth the milk. Add it to the Hojicha tea and for the final touch grate some lemon zest on top. Mix it and enjoy your Latte.
