How to make Pancakes with Sour Starter or Masa Madre.

What to do with your leftover masa madre or sour starter? Well I will give you a nice recipe of Pancakes so you don´t have to waste your sour starter. Let´s go with the recipe. Ingredients: For the Initial mix you will need: 42 gr Honey 227 gr Warm water 6 gr Salt 2 unit Eggs 200 Sifted White Bread Flour 27 gr Wheat Bran 255 gr Sour Starter or masa madre Second mix: 6 gr Baking Powder 3 gr Baking Soda 85 gr Unsalted Butter or you can use coconut oil.

Process: Whisk together the honey and warm water, dissolve your honey in the water. Add your salt and eggs one by one. Mix it. Add your sifted white bread flour mix and then add your whean bran. It doesn´t matter if you have little lumps. After you mix all the ingredients, close the container and put in the fridge for at least one hour. The reason is that the flour need time to absorb the batter liquid. After the hour add the sour starter into a bowl, add the baking powder and the baking soda mix it and you will see how the texture of your sour starter will change, you will notice lots of little bubbles. Melt your butter for at least 45 seconds but it will depend on your microwave. Don´t make it to hot because you will ruin your little bubbles. Add your melted butter into the previous mix. Add the initial batter and fold it. Know heat your pan, add butter or coconut oil, add one spoon of your pancake mix. wait a minute or two when you see bubbles forming on top. You can flip it over and then leave it for a few minutes more and voila You have your first pancake. Keep making pancakes until you finish your batter.

To accompany your pancakes you will need: Double cream plain yogurt, Put it in a piping bag with a nozzle so you can decorate your pancakes. It will give a nice presentation to your plate. I did homemade orange marmalade the other day so you can use any kind of jam that you like. Slices of Banana, carrot tops and rosemary flowers. Lime or lemon zest and grated almonds. If you don´t like any of these topping you can be free and creative to add your favorite fruits, jams or anything that you like.
